Tomato Parsley Salad

This is a simple dish that is perfect for spring and summer!

Recipe:

2 medium Roma tomatoes-diced
1 cup coarsely chopped parsley
1/2 Tbsp grape seed oil
1 Tbsp lemon juice

Mix all together and serve.

Yields: 2 servings
