Pumpkin Spice Oatmeal Cups

It’s that time of year again when all things become PUMPKIN SPICE! Yay! My daughter and I created a super easy and yummy breakfast, or really any time, recipe! Enjoy!

1 cup plain Greek yogurt
1/2 cup raw honey
1 cup puréed pumpkin
2 egg whites
2 tsp pumpkin pie spice
1 tsp ground cinnamon
3/4 tsp baking soda
1 1/2 tsp baking powder
2 1/2 cup old fashioned (gluten free) oats

Preheat the oven to 400 degrees.
In a medium mixing bowl, whisk all wet ingredients together. Add baking powder and soda. Whisk. With a wooden spoon, stir in the oats. Allow to sit for 5 minutes.
Non-stick spray a 12-muffin pan. Evenly scoop oatmeal mix into the pan.

Bake at 400 degrees for 20-22 minutes or until a toothpick inserted comes out clean.
