Pumpkin Spice and Chia Granola


Have you ever noticed that when you buy granola in the store, it is loaded with sugar? That makes me so frustrated! I love granola and pumpkin everything, so I combined them. I hope you enjoy!


2 cups pumpkin pie filling

1/2 cup local honey + 4 Tbsp for later

2 Tbsp grape seed oil

1 Tbsp vanilla

3 tsp cardamon

8 cups old fashioned oats

1/2 cup chia seeds


Preheat the oven to 300 degrees.

In a large bowl, combine all the ingredients (except the 4 Tbsp of honey). Mix well. Transfer the mixture to a non-stick sprayed roaster pan. Drizzle 4 Tbsp of honey on top and bake at 300 for 30 minutes. Turn the oven down to 250 degrees, stir the granola, and bake for about an hour – stirring every 10-15 minutes. Check the granola at the end of the one hour. If not crisp, bake for an additional 15 minutes, stir, and check again. Continue this until the granola is crisp. Remove from oven and allow to cool completely. Once cooled, scoop into a zipper bag and store in a dry pantry.

Yields: approx. 14 cups
