Mango Kale Salad

This is such a refreshing salad! Give it a try!


3 green onions – diced
1 mango – peeled and diced
1 medium Roma tomato – diced
1 bunch parsley – coarsely chopped
1 bunch kale – deveined and finely chopped in a food processor

1 Tbsp grape seed or olive oil
1 Tbsp ground ginger
1 Tbsp low sodium soy sauce
1/4 cup lemon juice
Fresh ground pepper to taste

In a large bowl add all veggies and fruit together. In a separate bowl, whisk dressing ingredients. Pour over salad and toss. Serve right away or allow to chill.

Yields: 8 cups
