It’s autumn! Who doesn’t love some delicious greens in autumn?! Well, okay, maybe not everyone loves them, BUT I DO!! This is a little twist on sautéed kale. Give it a try!
2 large bunches of kale
10 cups fresh bean sprouts
2 cloves garlic – minced
1 large onion – minced
1 Tbsp. grapeseed oil
freshly ground black pepper to taste
In a large electric skillet or wok, heat the oil and sauté the onions and garlic until golden. Add in the kale and sprouts and sauté for about 5 minutes. Add pepper and sauté for about 2 more minutes. I like to keep my vegetables crunchy, but if you prefer a softer vegetable, continue to sauté until the desired crispness is reached.
Yields: 6 cups (depending on the size of the kale bunches and how far they are cooked down)
