Gluten Free-Vegetarian/Vegan Chocolate Chip Cookies

Sometimes the words ‘gluten free,’ ‘vegetarian,’ and ‘vegan’ deter people from trying something new, BUT these are kiddo tested and Mommy approved! With how fluffy and chewy they are, they are bound to be a hit! Enjoy!

Recipe:(with vegan option)

1/3 cup local honey**

2 Tbsp. maple syrup

2 Tbsp. chia seeds

1/4 cup apple sauce

3 Tbsp. vanilla extract (OR 1 Tbsp. vanilla and 2 Tbsp. soy/flax milk)

1 3/4 cup Gluten free 1-to-1 flour ( I use Bob’s)

1 tsp. baking soda

1 tsp. vinegar

1/2 cup dark chocolate chips

**If vegan, take out the honey and use maple syrup in its place.

Preheat oven to 375 degrees.

In a mixing bowl, cream honey, syrup, apple sauce, and chia seeds. Add vanilla (or vanilla and soy/flax milk combo) and mix well. In a separate bowl, sift together all dry ingredients. Slowly add the dry to the wet and mix well. Add vinegar and mix well again. Now, stir in the chocolate chips. Allow to sit for 2-4 minutes to allow the chia to gel. On a non-stick sprayed cookie sheet, place a 1 1/2 Tbsp. sized scoop of dough and slightly spread the dough to prevent too much thickness. Bake at 375 degrees for 8-10 minutes.

Yields: 3 dozen cookies
