I don’t know about y’all, but I love anything wrapped in a corn tortilla! These are quick and easy for a week night meal. They can also be made up in advance and frozen! Love that!
15 corn tortillas
3-4 cups shredded chicken
1 15oz can of black olives – rinsed and minced
1 8oz jar of green olives – rinsed and minced
1 15oz can of black beans – rinsed
2 fresh tomoates – diced
1 avocado – diced
1/2 white onion – diced
1/4 tsp cumin
**mix all together and set aside
Preheat the oven to 350 degrees.
For each tortilla, place: 1/4 cup
shredded chicken, 1/2 Tbsp black olives, 1/2 Tbsp green olives, 1 Tbsp black olives.
Roll as tight as you can and place in a 9×13 pan. Repeat for all 15 tortilla.
When all 15 rolls are in the pan, spray lightly with oil and bake covered for 20 minutes. Uncover and broil for 2-3 minutes to brown the top.
Serve with topping recipe above and salad. Enjoy!
